These fun cookie crafts are perfect for a rainy day with the kids or if you need some cute homemade gifts for the holidays!
Basic Sugar Cookie Recipe
You will need:
220g butter
220g caster sugar
1 egg
1 tsp vanilla extract
425g plain flour
Method:
Combine softened butter and caster sugar with a hand mixer.
Add an egg and vanilla essence and mix.
Sprinkle in your flour, best to do it in parts and mix, when it gets too stiff to mix start to knead it till it is a soft smooth dough.
TOP TIP- You can wrap up your cookie dough in cling film and store in the fridge for up to two days, you can also store it in the freezer for up to 3 months.
Emoji Cookies

You will need:
Plain flour
Cookie dough
Rolling pin
Circle cutter
Yellow fondant
Coloured royal icing in piping bags
Method:
Sprinkle plain flour onto your clean, dry kitchen surface and roll out your cookie dough on top of it.
Roll out to a thickness of 5mm and cut as many circles out of the dough as you can. Knead and repeat till you have as many circles as you require
Place the cookies on a baking tray
Bake at 190℃/375℉ for 10 minutes or till golden.
Leave the cookies to cool and roll out yellow fondant to 3mm thick. Cut out more circles with the same cookie cutter and stick them onto the cooled cookies.
TOP TIP- If your fondant is not sticking to your cookies brush a bit of edible glue, jam or water onto the cookie first.
Pipe with your black royal icing fun emoji designs, and then fill with other colours
Leave to dry and then they are ready to be gifted- or eaten by you, we won’t judge.
Raft Cupcakes

You will need:
Royal icing
Cookie dough
Cupcakes
Blue buttercream in a piping bag with a 2D nozzle
Wafer rolls
Method:
Sprinkle plain flour onto your clean, dry kitchen surface and roll out your cookie dough on top of it.
Roll out to a thickness of 5mm and use your knife to cut out a sail shape with a square section at the bottom (This will help you attach it to the cupcake later!)
Peel excess away and put your sails on a baking tray.
Bake at 190℃/375℉ for 10 minutes or till golden.
Once baked and cool pipe your design onto the sails with royal icing.
Pipe a swirly sea on your cupcakes with blue buttercream.
Break a wafer roll in two and place on the cupcake.
Push your sail cookie in between the wafer rolls and you’ve made a cute boat your kids are sure to recognize!
Pumpkin Spice Sugar Cookies

For the Pumpkin Spice Mix
You will need:
3 Tablespoons Ground Cinnamon.
2 teaspoons Ground Ginger.
2 teaspoons Nutmeg.
1-1/2 teaspoon Ground Allspice.
1-1/2 teaspoon Ground Cloves.
Method:
Mix all of the ingredients into a bowl. It’s that simple.
For the cookies you will need:
4¾ cups all-purpose flour
1 teaspoon baking soda
Hefty pinch salt
2 ½ tsp pumpkin spice
1 cup (2 sticks) unsalted butter, room temperature
1¾ cups granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
½ cup light or dark molasses
Royal icing sugar
Method:
Add 4¾ cups all-purpose flour to a bowl, and mix in the pumpkin spice and salt. Put this to one side.
Put the softened butter in another bowl and add the sugar, blend this till light and fluffy,
Add in the molasses, vanilla extract and eggs and then mix till all combined.
Into the bowl add the flour mix a couple of cups at a time, mixing in between. When it starts to form a dough use your hands to knead it into an even consistency.
Wrap the dough and chill the dough for 2 hours in the fridge.
When ready to make your cookies roll the dough out to 5mm thick. Then, using a knife or cookie cutters, cut out a pumpkin shape.
Place them all on a baking sheet, pop them in the oven for 11 min on 190°C/375°F. Once baked set them aside to cool.
To make your royal icing mix together royal icing sugar and water, or alternately egg whites and icing sugar. Make it so it is a glossy stiff mix that keeps its form when piped. Colour it using food gel, you will need two colours of royal icing; orange and green. Spoon these into piping bags fit with a small round nozzle.
Pipe around the edge of the cookie with orange royal icing and then fill the inside Once set, pipe on your green stem and curly vines for that added fancy touch.
TOP TIP- To make the piping smooth tap it gently on the counter and use a cocktail stick to poke air bubbles.
Stained Glass bird cookies

You will need:
Cookie dough
Icing pens
Boiled sweets
Edible eyes
Mini chocolate beans
Rolling pin
Food bag
Method:
Sprinkle plain flour onto your clean, dry kitchen surface and roll out your cookie dough on top of it.
Roll out to a thickness of 5mm and cut as many circles out of the dough as you can. Knead and repeat till you have as many circles as you require.
Then cut out a smaller circle out of the cookies to make the bird’s tummy.
Now for the fun bit! -put the boiled sweets in a food bag and hammer the bag with a rolling pin to make them into small pieces.
Sprinkle the fine candy powder into the centre of the cookies; fill them well!
Bake at 190℃/375℉ for 10 minutes or till golden. You should have an awesome stained glass effect where the candy has melted and solidified.
Once cool stick the edible eyes and chocolate bean nose on with a icing pen.
Finish off your design with the icing pen, add as much character as you like!
Once set you have finished your flock of tasty treats!
